The process of sea salt extraction consists of three steps: concentration of sea water, crystallization of the sodium chloride, harvesting and washing. Because it uses natural processes, NORSAL production is affected by climate conditions and is therefore programmed according to the dry and rain seasons: pumping, concentration and crystallization of sea water begin in June/July, with the arrival of the dry season. The harvesting and washing of the crystallized salt are made from August and February. From March to May, the rainy season in the salt producing region, the process is interrupted and this time is used for maintenance and the preparation of the following harvest.
